Title: Brioche with Dried Strawberries-Hitachi/regal

Yield: 1 Loaf

6ozUnsalted butter, very soft
3 Extra large eggs
1/3cWater
1tbFinely grated orange rind
  OR 1 t orange oil
1 1/4tsSalt
1/3cSugar
1/4tsAscorbic acid
3tbPowdered buttermilk
3cUnbleached white flour plus
  1 or 2 additional T's if the
  Dough is still very sticky
  After the first 5 minutes of
  Kneading
1tbYeast
3/4cDried strawberries, whole

Place all the ingredients except strawberries in the machine. Program for basic white bread (hitachi), sweet bread (regal), or raisin bread (zoji), and press start. Add the strawberries during the last 5 minutes of the final knead cycle (hitachi and regal), or when the zoji's beeper sounds.

"Dried strawberries are difficult but not impossible, to find. As people see how delicious they are, they will be more commony available. If your local gourmet food store doesn't have them--or can't find them for you-- you can mail order them. You can also substitute an equal amount of dried cherries or blueberries. "This light, buttery bread is a high riser with a fabulously ricn and inviting aroma. The butter gives it a tender, flaky crust and a delicate crumb. It's heavenly right from the bread machine, but even more spectacular when made into french toast or bread pudding and served with Fresh Strawberry Sauce."
